So proud of our Sous Chef Cherrie Wilson who has won the Arthur E Denison Trophy through the National Baking Industry! She’ll be off to Paris in 2017 to be in patisserie heaven on earth! Her assignment was based on the ‘Artisan’ product comparing humble businesses like Dolcettini Patisserie to the big chains and supermarkets! Well done girl #keepingtheindustryalive
Currently in the manufacturing process… Dolcettini’s pop up kiosk will be opening in October/Novemeber 2016 in the fresh food court of Castle Towers Shopping Centre! This will be a concept store selling all our fabulous fresh artisan pastries, organic sourdoughs, hand-crafted desserts and tortes! Head Chef and owner Francesco Gulisano was on stage in the Callebaut Kitchen at the Smooth Festival of Chocolate this year demonstrating an indulgent little creation. A caramel choux with elderflower, chocolate coating, salted caramel custard and topped with a beautiful edible flower! So much love from the audience as they munched down their treat and took note of the technical tips in pastry!
Owner Head Chef Francesco will be live on stage at this years’ Italian Food & Wine Festival Sydney 21st August 2016 showcasing some of his magic! A Dolcettini ‘Ricotta Cornetto’ stand will also be featured in the Gourmet Traveller Food Market – be sure to grab one freshly piped!
We’ve hosted quite a few high teas over the years here at Dolcettini Patisserie and the feedback and demand is always so positive. We decided that wonderful Mother’s deserve a treat again this year.
